The Regional Chamber and Rhonda Boos announce a ribbon cutting at 1 p.m., Wednesday, August 7, for Rhonda’s Emerald Diner, 825 N. Main St., Hubbard.
Owner, Rhonda Boos, has been in the restaurant business for over 30 years and has always dreamed of owning her own restaurant. The Emerald Diner has been a traditional dining spot in Hubbard and Boos plans to continue that tradition by serving traditional “diner” and “comfort foods.”
The original box car was built by the O'Malley's Dining Car Co. in Elizabeth, NJ in 1939 and was turned into Burt’s Diner in Norwich, CT. J.P. Marsh bought the diner and brought it back to Hubbard in 1995. He transformed it into The Emerald Diner giving it a railroad theme. In 2012, a fire destroyed much of the interior. Five years was spent rebuilding the diner.
Rhonda’s Emerald Diner is open every day from 7 a.m. to 8 p.m. To go orders can be called in and picked up at their drive-up window.
